¾ cup low-fat cottage cheese
1 egg
4 Tbsp pumpkin puree
3 Tbsp monk fruit sweetener
1 tsp vanilla extract
1 tsp cinnamon
Sugar-free whipped cream, to taste
Blend all of the ingredients.
Pour the mixture into three ramekins and bake at 350°F for 15 minutes.
Chill and top with sugar-free whipped cream and cinnamon.
Recipe Yields: 4 servings of protein and 1/4 servings of complex carbs.
